Varagu Rice Vegetable bath / upma

Dear friends,

I have been MIA for a very long time in my cooking blog. Mr Craft blog kept me busy and i felt lazy to write the recipe(open to agree).

Varagu rice is a habitat crop of our ancient South India and it has high source of Protein, Calcium, fiber and Minerals. It can reduce body weight. Varagu increases Liver functionality and good for lympatic disorder.

You can make anything with this Pongal, fried rice, upma and many more. one can't forget the taste of Varugu Rice Pongal. it is yummy, will post the recipe soon on this.

Here is post on a health dish - Varagu rice upma / Kodo millet upma.

Ingredients:
Varugu Rice - 2 cups
Mixed veggies - 1 cup(carrrot, beans, peas)
Big Onion  - 1 no
Ginger - 1/2 inch
Green chilli - 3 Nos
Curry leaf - a few
For tadka - mustard, urad dhall
Asofoetida - a pinch
Salt for taste
Oil for seasoning

Method:


  1. Dry roast the varagu rice like rawa. Keep aside. 
  2. Heat the oil in a pressure cooker and add the mustard seeds, urad dal, green chillies and curry leaves. 
  3. Fry for while and add the asafoetida, ginger and onions and sauté till the onions become translucent. 
  4. Add the vegetables along with Varugu rice and add 2 ½ cup of water and pressure cook it for 2~3 whistle.
  5. Serve hot with Coconut chutney

Multigrain porridge / Kanji

Version 1:

Ingredients:
Multigrain Powder - 2 tbsp
Water - 200 ml  / 3/4 cup
Salt - to taste
Buttermilk -1 cup

Method:
  1. Mix the porridge powder with water well without any lumps.
  2. Cook in a low flame and stir continuously till it becomes thick.
  3. After it cools , add salt and buttermilk.
  4. A Delicious & nutritious drink is ready

Version 2:

Ingredients:
Multigrain Powder - 2 tbsp
Water - 200 ml / 3/4 cup
Jaggery or sugar  - 1 tbsp
Milk -1 cup

Method:
  1. Mix the porridge powder with water well without any lumps.
  2. Add jaggery or sugar to it a and cook in a low flame and stir continuously till it becomes thick.
  3. Add milk to it and enjoy the nutrious drink.
This can be taken by people of all ages. It is good for diabetes too.

Vethalai kudineer / Betel leaf water

Ingredients:
Vethalai / Betel leaves – 5 Nos(roughly chopped)
Thulasi / holy basil leaves – 20 Nos
Black crushed pepper corns – 5 no
Palm candy sugar – according to taste
Water - 3 cups

Method:

1. In a pan add water and to this add betel, holy basil leaves, pepper corns and Palm candy.
2. Heat the pan and let it boil for 15 mins.
3. Turn off the flame and allow it for 5 mins.
4. Filter and the drink is ready.

This is good for cold and indigestion problems.

Kashayam for Cold

Ingredients:
Tulasi or Basil – 8-10 leaves (you can put along with the stem).
Leaves of the Karpooravalli– 1-2 leaves.
Omam (ajwain seeds)– one teaspoon
Cumin seeds – one teaspoon
Dill seeds(fennel) – one teaspoon
Pepper - 3-4 peppercorns

Method:

1. Take 4 glasses of water, put all the abovementioned ingredients and boil it for 5 mins.
2. Turn off the flame & close the lid for 5 mins.
3. Drink it warm with adding honey

You can use this drink for the whole day.
It is good for childrens too.

Plantain stem Juice

Ingredients:
6 inches Vazhai Thandu (Plantain Stem)
2 tbsp Grated coconut
1/4 tsp cumin seed


Method
1. Grind the plantain stem in a mixie along with the grated coconut & cumin seeds.
2.Add water 400 ml.
3.Filter and mix salt.

Uses:
Improves kidney function.
Useful in ulcer and obesity

Cumin Kashayam for Cough & cold

Cumin is an excellent digestive aid,an appetite stimulant , medicine for cold .
For any and all of these problems. We get best results if they are taken in the
following format.

Ingredients :
Cumin seeds - 2 tbsp
Pepper fresh - 2 tbsp
Ginger - 2 " piece
Thulasi leaves- a handful
Water 3 cups
Brown cane sugar - 3 tbsp

Method :
1.Dry Roast Cumin and Pepper separately.
2.Mash Ginger
3.Boil water ,add the ginger ,thulasi and the roasted seeds.
4.Simmer it for 15 to 20 min .
5.Let the water reduce to half portion. Then add the sugar and mix till sugar dissolves .
6.Turn off the flame. Let it stand for 15 Mins.
7.Drain the kashayam and drink


We can either drink it as it is or add it to milk and drink.Taking this once a week relieves us of any kinds of digestive ailments and common cough and colds. It can be given to babies in small portion.
